About this role
On's Executive Sous Chef role in Abu Dhabi sits at the operational heart of the hotel's culinary program. You'll manage daily kitchen production across all food and beverage outlets, overseeing food quality, presentation, cost control, and profitability while working closely with the Executive Chef and F&B Director to develop menus and continuously refine the guest dining experience. This is a hands-on leadership position that balances strategic input on menu innovation with direct responsibility for kitchen systems, workflows, and team performance.
The role demands someone who can lead and develop kitchen staff through coaching and recruitment while maintaining strict compliance with health, safety, and sanitation standards. You'll engage directly with guests to gather feedback and identify dining trends, translating that insight into operational improvements. Success here requires both culinary expertise and the ability to manage competing priorities—quality, cost, efficiency, and team morale—simultaneously in a high-volume hotel environment.
Hilton emphasizes values-driven hiring: they're looking for candidates who combine hospitality passion with integrity, leadership capability, teamwork orientation, and personal accountability. This is a full-time, in-office position where you'll be expected to bring urgency and discipline to daily operations while contributing to what Hilton positions as an award-winning workplace culture.
