About this role

Working as a Demi Chef de Partie at The Ritz-Carlton Sydney means joining a kitchen team where you'll prepare and cook food to exacting standards while supporting the broader operations of a luxury hotel. You'll handle everything from temperature control and food preparation to portion management and cold food preparation, while also communicating with both kitchen staff and front-of-house teams about specials, stock levels, and service needs. The role requires you to maintain meticulous food logs, monitor quality consistently, and ensure every dish meets the hotel's presentation and quality benchmarks.

This position suits someone with a Certificate IV in Commercial Cookery or equivalent who genuinely enjoys hospitality and wants to develop within a structured, high-standard environment. You'll need strong communication skills, reliability during busy service periods, and the physical capacity to stand for extended periods and handle regular lifting up to 25 pounds. The role also involves some supervisory support—helping with staff training, scheduling, and motivation—so you should be comfortable acting as a role model and contributing to team development.

Beyond the day-to-day kitchen work, you'll have access to Marriott's global benefits including discounted accommodation worldwide, food and beverage discounts, wellbeing programs, paid birthday leave, and training opportunities. Full Australian working rights are required.
