About this role

At Hiroki‑San in Detroit's restored Book Tower, you'd be the guide for guests navigating a refined Japanese dining experience rooted in tradition and precision. This server role demands someone who can speak confidently about Japanese ingredients sourced weekly from Tokyo's Toyosu Market, orchestrate seamless pacing with the sushi and robata teams, and deliver service that feels both elevated and genuinely attentive. You'll manage the full arc of each table—from menu guidance and beverage pairing recommendations to order execution and payment—while maintaining the polished composure the restaurant's design-driven atmosphere requires.

The position suits someone with one to two years of upscale or fine-dining service experience who approaches hospitality as a craft. You'll need strong fundamentals in food and beverage knowledge, comfort with multitasking during high-intensity service, and a genuine interest in Japanese culinary culture. Method Co. offers competitive hourly pay plus tips, health and dental benefits, sick time and vacation, and employee dining perks across their portfolio—along with room to grow within a boutique hospitality group that prioritizes thoughtful design and cultural respect.

The work is physically demanding: expect to stand and walk for eight-hour shifts, move quickly between sections, and occasionally lift or carry items up to fifty pounds. You'll need flexibility for nights, weekends, and holidays.
